how do you weigh a plane without a scale?

One good way to do it is with the waterline on a ship:
"Taxi or fly the jet onto a ship big enough to hold it. Paint a mark on the hull of the ship showing the water level. Then remove the jet. Now, load the ship with items of known weight (say, 100-pound bales of cotton) until it sinks to exactly the line you painted on the hull. The total weight of the items will equal the weight of the jet."

You don't have to. A plane is two-dimensional, and thus it has no weight.

If you know the thrust of the engines, calculate how much thrust you need to accelerate the plane at a certain velocity. F=ma, you can get the mass.

Man, this is so simple! Disassemble the plane and weigh each piece. Now you know how much the plane weighed. OH wait. Do you mean that you can't use a scale even after you disassemble the plane? DOH.
Uh...uh...can you look up the weight of each piece of the plane on the internet? That would give you the weight of the plane without YOU using a scale.
