A great poached egg is a subtle art.

The best way to ensure a perfectly poached egg is to spin the water. Many people forget to do that.

Fill your pan with water, bring water to a boil & then lower to a simmer. Add a pinch of salt & a couple of tsps of white wine vinegar (this helps the whites congeal more quickly so you can keep a runny yolk.

Crack your egg into a coffee cup for ease of pouring. Make sure the eggs are fresh and COLD.

Spin the water with a spoon creating a little whirlpool. This is a dual purpose technique that lowers the water temperature slightly in case it's still too hot & the added center of gravity helps prevent the egg from separating. Gently pour the egg into the center of the vortex.

Let it go for 2 minutes if you like it runny or 3 if you like it medium. Remove it gently with a spoon & submerge it in a bowl of warm salted water to rapidly stop the cooking process.

If you want to make it super-decadent, drizzle a Mornay sauce over it that's made thus:

2 1/2 tablespoons butter
3 tablespoons all-purpose flour
2 cups warmed milk
1/4 teaspoon salt
1/8 teaspoon white pepper
pinch freshly grated nutmeg
2 ounces grated cheese, such as Gruyere

In a medium saucepan melt the butter over medium-high heat. Add the flour and cook, stirring constantly, yellow and frothy, about 1 minute. Do not allow the roux to brown. Slowly whisk in the milk and continue to whisk until the sauce thickens and comes to a boil, about 2 to 3 minutes. Reduce the heat to a simmer and season with the salt, pepper and nutmeg.

Allow to simmer for 2 to 3 minutes.

Stir in the cheese and whisk until melted. If the sauce seems too thick, thin with a little milk.

Breakfast of champions!

Boil enough water to cover the egg in a frying pan. Add a tablespoon of vinegar and lower the temperature to a simmer. Crack the egg into the water, and cook for 3 minutes for a medium egg. Remove it with a slotted spoon carefully to avoid breaking the yolk. For more information see How to Poach an Egg.
