Oh I love split pea soup. If I have a ham bone I will use it, though I have used smoked ham hocks. I have also cubed up ham and added it if I don't have either of the first two.
The way I make it is a bit different than many people. I wash the split peas and add them to the water (1 package which is about 2 cups added to 5 cups or so of water). If I have a ham bone or ham hocks I add them now. If I am going to add cubed up ham I wait until later.
Bring the water to a boil. I thinly slice up about 1 cup of celery and I chop an onion and add both to the soup.
Reduce heat and simmer for about 45 minutes or until the peas as beginning to get soft but are still firm in the middle.
Chop up a cup or so of carrots (I like the baby carrots because they are sweeter) and peel and cube a couple of potatoes. Add them to the soup and simmer until the carrots and potatoes are cooked. If I have ham hocks in the soup I pull them out when I add the carrots and potatoes and strip the meat from the bones and chop it up to return to the soup. If I am adding cubed ham, I add it when the carrots and pototoes go in.
Some people like to add a couple teaspoons of salt while the soup is cooking, but if the ham is really salty I don't. I figure that people can always salt to taste while they are eating, but if you put too much salt in the soup while it's cooking it is pretty difficult to fix.
Sometimes I make muffins or cornbread with the soup. Yummy!
