Hi, @mmng23!
We also love a good potato soup, especially in the cold season when the potato soups becomes a real comforter!
I will gladly share my potato/leek soup recipe with you as it is absolutely delicious.
Ingredients: Potatoes, leeks, stock cubes, cream, parsley or chives
Peel 2 big potatoes for each person and dice the potatoes.
Put the diced potatoes into a big pot and cover the potatoes with water. Add one or two stock cubes at this stage.
Bring to boil and cook until potatoes are really soft (about 1 hours).
Meanwhile clean and cut up one or two leeks and add them to the potato soup when potatoes are almost soft.
When potatoes and leeks are soft, add a carton of cooking cream and add more salt if necessary and whisk the soup until creamy.
Use plenty of fresh parsley or chives to finish off the soup and
Enjoy!
