How do you make potato latkes?

2 eggs
3 c. grated, drained potatoes (easy when using a food processor!)
4 tbsp. grated onion
1 tsp. salt
1/4 tsp. pepper
2 tbsp. cracker or matzo meal
1/2 c. oil for frying latkes plus about 2 tbsp. for onion

Saute onion until slightly browned. Beat eggs. Add potatoes, onion, salt, pepper, and meal. Heat half the oil in frying pan and drop potato mixture by the tablespoon. Fry until browned on both sides. Serve with applesauce or sour cream.
Serves 8.

This is a traditional dish served during the Jewish festival of Chanukah (a.k.a. The Holiday of Lights, which usually coincides with the Christmas Season). This joyous holiday is celebrated by lighting candles, giving gifts to children, spinning a top (dreidel) and eating potato latkes.

Grate the potatoes and the onion. The weak can use a food processor.

Mix the grated potatoes and onion, beaten egg, salt and pepper, and matzo meal or flour in a bowl.

Heat a skillet over a medium flame.

Film the skillet with 1 to 2 tbsp. oil.

Form the potato mixture into small cakes - 2 to 3 tbsp. of potato per cake. Don't make the cakes too big; they're easier to turn when small.

Flatten the cakes slightly with a spatula.

Cook until the cakes are nice and brown on the bottom, then turn and cook the other side.

Repeat with the remaining potato mixture.
