Slice the avocado in half. With a table spoon, scoop out the seed and set aside. Scoop out the avocado and put in a bowl. Mash the avocado with a fork or potato masher. Add a squeeze of lemon or lime and a few pinches of salt. I use kosher salt or sea salt.
Mix well. Taste it. If it needs more salt add a little at a time until you get it right to taste. If your guacamole is going to sit for a while, put the seed in the center of it and it will help keep it from turning brown. The combination of lemon/lime juice and the seed help keep the guacamole green.
This is a basic guacamole recipe. You can spice up your guacamole by adding any of these combinations: garlic, diced tomatoes, diced onions, salsa or fresh chopped cilantro.

* 3 limes, juiced
* 1/2 red onion, chopped
* 1 garlic clove, minced
* 2 serrano chiles, sliced thinly
* 1 big handful fresh cilantro, finely chopped
* Extra-virgin olive oil
* Kosher salt and freshly ground black pepper
Directions
Halve and pit the avocados. Scoop out the flesh with a tablespoon into a mixing bowl. Mash the avocados with a fork, leaving them somewhat chunky. Add the remaining ingredients, and fold everything together to gently mix. Lay a piece of plastic wrap right on the surface of the guacamole so it doesn't brown and refrigerate 1 hour before serving.

1/2 c. medium salsa
pinch of salt
pinch of garlic powder
1 or 2 green onions
Just mash everything all together and top with green onions. The salsa gives it plenty of flavor.
