Crepe batter:
2 cups all purpose flour
1/4 cup sugar
1/4 teaspoon fine salt
2 cups whole milk
1/2 cup water
6 large eggs
8 tablespoons unsalted butter, melted (1 stick)
2 teaspoons pure vanilla extract
Fruit:
2 cups strawberries, washed
2 cups blackberries, washed
1/3 cup sugar
Splash orange liqueur, optional
Filling:
2 cups fromage blanc
2 cups marscarpone
1/3 cup sugar
2 tablespoons finely grated orange zest
1/2 cup freshly squeezed orange juice
1 teaspoon pure vanilla extract
Directions
To make the batter: Blend the flour, sugar, and salt in a blender. Then, add the milk, water, eggs, butter, and vanilla extract, and process until smooth. Set aside for at least 30 minutes.
While batter rests, hull and halve the strawberries and add with the blackberries, sugar and orange liqueur, if using, in a medium bowl; set aside.
Whisk the cheeses with the sugar, orange zest and juice, and the vanilla extract.
Heat an 6-inch nonstick skillet or crepe pan over medium heat until a drop of water sizzles briefly on its surface before evaporating. Pour 2 tablespoons of crepe batter and swirl it to coat the skillet evenly. Cook until the batter for about 30 seconds. Flip the crepe and cook the other side until just barely golden. Repeat with the remaining batter, stacking the crepes as they cook.
Place 1 tablespoon of the cheese filling on the lower left-hand corner of each crepe. Fold crepe in half, then half again to make a triangle with filling in the tip. Repeat with the remaining crepes and filling. Stack filled crepes neatly on serving platter. The crepes can be prepared a day ahead, covered tightly with plastic wrap and refrigerated overnight.
To serve:
Preheat an oven to 250 degrees F. Cover crepes with foil and warm in the oven until heated through, about 10 minutes. Spoon the macerated berries over the crepes and serve.

Melt butter in microwave and cool. Beat eggs, water, milk, brandy butter. Add sugar and mix well. Stir salt into measured flour and gradually add to mixture. Use a crepe pan and cook til lightly brown.

How to Make Crepes
1. Beat together 1 cup of flour and 2 eggs.
2. Add in 1/2 cup of milk and 1/2 cup of water a little at a time and mix until well combined.
3. Add in 1/4 teaspoon salt and 2 tablespoons of melted butter, whisking until the batter is uniform.
4. Put a nonstick pan on medium heat and add in the batter in 1/4 cup at at time moving the pan around to evenly coat the bottom.
5. Cook it for two minutes on the first side and flip it over to cook for another 30 seconds. Serve immediately or set in a warm oven.
6. Assemble by filling with ice cream, a favorite fruit or a desert sauce and rolling up into a tube.

Ingredients
1 ½ cup all-purpose flour
2 eggs
3/4 cup milk
1/2 cup water
4 tablespoons margarine or butter, melted
1/4 teaspoon salt

*Whisk the flour and eggs together in a large mixing bowl. Add in milk and water gradually, stirring well to combine. Next, Add butter and salt, then the mixture until smooth.
*Now Heat up a lightly oiled frying pan over medium heat. Pour 1/4 cup of the mixed batter onto the frying pan. Coat the whole surface of the pan by tilting the frying pan in a circular motion.
*Let the crepe Cook about 2 minutes, until the bottom side is light brown. With a spatula, loosen it and turn to cook the other side.
*Repeat with the remaining batter and serve hot.
#Chicken-mushroom Filling
Ingredients
500 grams barbecue chicken cut into tiny pieces
250 grams mushrooms, finely chopped
1 tin Cream Mushroom Soup
100ml thick cream
1 onion, finely chopped
Directions
*Place a lightly oiled frying pan on medium heat and add the chopped onions and mushrooms. Fry until they are softened
*Next, the Add the chicken pieces and the mushroom soup. Stir the mixture until well incorporated
*Add the cream and stir until you get a thicker consistency
*Put off the heat and leave to cool a bit.
*Now add it onto the crepes and wrap it up.
*Heat up the filled crepes for 2 minutes in microwave and serve hot.
