Quite simple. Buy a packet of couscous and put 140g in a large bowl. Pour over 225ml of vegetable stock and then cover the bowl for around 10 minutes.
Now, get 200g of halved cherry tomatoes, 100g of cubed log firm goat's cheese and a handful of chopped mint leaves. Mix these in with the bowl of stock and couscous and pour around 2 tablespoons of oil.
With a fork, fluff the couscous and stir the mixture with the juice of half a lemon.
