How do you like to eat dried pineapples?
I have quite recently (this morning) fallen in love with dried pineapples. These very sweet dried fruit treats are amazingly deeelicious. I like to shop the bulk/organic section of my local grocery store and use this time and section to branch out gastronomically and try things I have not before. Yesterday at the store it was the low sugar dried pineapples that caught my attention and made it into the carriage.
While these pineapples are very sweet and very delicious all on their own I was wondering if they had a common or uncommon usage in a recipe for something else. A dessert? Something baked? An entrée? An appetizer? What do you like to use dried pineapples for?

It's funny that you ask this because I just stopped at Cabela's on my way back from vacation and picked up a big bag of Caribbean Crunch trail mix. I don't like a lot of trail mixes that contain peanuts, but I like those that contain dried fruit. My favorite way to eat dried pineapple is in a trail mix with other types of dried fruit and in homemade granola. I also like dried apricots, dried figs, dried cranberries, and dried mangoes, but I am not fond of the dried bananas that seem to dominate many varieties of commercial trail mix.
You can make your own Caribbean crunch trail mix by combining dried pineapples, dried mangoes, coconut, and chopped Macadamia nuts. You can also add dried pineapples to granola, along with dried cranberries and chopped pecans for either breakfast or the ultimate snack. Sounds great Kel :) I have been eating a lot of almonds, pecans, and raisins for breakfast so with the addition of dried pineapples and a couple more new ingredients from the bulk isle I will be in trail mix heaven.
