How do you get to use the special items you acquire throughout the game? Items such as, Hera's chalice, Hercules' shoulder guard, etc.

God of War 3 features 10 Godly Possessions. You can find these items while playing the game for the first time, but you can only use them after you finish the game. When you use these possessions", you will not be able to win trophies. These are the godly possessions:
* Zeus' Eagle – Kratos will receive Infinite Rage of Sparta.
* Hades' Helm –Kratos' health bar will reach maximum level and the player interface will display Maters for his Magic abilities and items;
* Helios' Shield- Kratos will have the hit counter increased by 3;
* Hermes' Coin – The amount of Red Orbs Kratos collects increases by 10;
* Hercules' Shoulder Guard - The damage Kratos will receive is reduced by 33%;
* Poseidon's Conch Shell – Kratos will have infinite magic;
* Aphrodite's Garter – Kratos will continue to use Athena's Blades;
* Hephaestus' Ring – All Quick Time Events are won;
* Daedalus' Schematics – There is no limit in using items. All of them can be used an infinite amount of times;
* Hera's Chalice – The HM (Health Meter) will drain, but will never be entirely empty.

* Zeus's Eagle: found by climbing up the right wall in the Heart of Giga. Grants infinite Rage of Sparta.
* Helios's Shield: found on the ground after defeating Helios. Triples your combo meter.
* Hermes' Coin: Activate Hermes' Coin to collect 10 times the amount of Red Orbs. Either before or after fighting Hermes, look under the statue's head.
* Hercules' Shoulder Guard: Activate Hercules' Shoulder Guard to decrease damage taken by a third. After you defeat Hercules you will find this item under his body, at the bottom of the pool.
* Poseidon's Conch Shell: Activate Poseidon's Conch Shell to grant infinite magic. You find this item in Poseidon's Chamber, just before the upper gardens (broken bridges), in the same room where you encounter Poseidon's mistress.
* Hera's Chalice: Activate Hera's Chalice to cause the Health Meter to slowly drain over time, never completely emptying it. Found after speaking to Hera at the entrance to the Olympic Gardens.
* Hades' Helm: Max out Health, Magic, and Item Meters. This item is found after you defeat Hades, at the bottom of the river.
* Hephaestus's Ring: After defeating Hepaestus, look on the left side of his chamber, near the pool. With it you will always correctly complete quick time events.
* Aphrodite's Garter: In Aphrodite's chamber, look behind the bed and you can jump up to a platform where you will find the garter. Lets you use Athena's Blades instead of Blades of the Exile.
* Daedalus's Schematics: found in Daedalus's workshop, which is just before the Olympic Gardens. It is in one of the chests hanging from the ceiling. With it you will never run out of power for any of your items.

Well, first of all, you can only use them on a second play-through of the game.
Plus, you can only use them when playing on the same difficulty level. So, if you play it first on 'Easy', you can't use the possessions on 'hard'.
As far as I know, the possession activates automatically then. If not, go through your inventory by pressing R1 in-game, and you'll find your possessions.
