How do you fix cactus pads? I'm thinking of growing opuntia for food in my garden.

The attached video is in Spanish, but you don't need a translation to see how she is cleaning the nopales, or cactus pads. It is a relatively quick job, easier that I thought. I have been eating pickles nopales for quite a few years, so if you want to make this, find a dill pickle recipe and substitute the nopales for the cucumbers. (a good dill pickle recipe is found on the container of pickliing salt that you buy in the grocery store. I use these pickled nopalitos as an addition to soft tacos (chicken or beef).
Other things you can do, as indicated in the video are to cook them with scrambled eggs or with chorizo sausage or, even better, chorizo, eggs and nopalitos. You can steam them and eat them as they are, salted and peppered. The limit is your imagination. Since they have a slime similar to okra, they would be a good substitute ingredient in gumbo.
