I have watched Zeus be defeated and it's not too hard...at least i don't think so but here is an exerpt from a walkthrough on cheatcc.com

Once on the ledge, fight Zeus until you see a circle prompt. Keep attacking
however you want until the next prompt, then follow it. Watch the scene.
After the scene follow the path to a save point and head out the door. Glide

parry-return his bolts thanks to the Golden Fleece. When he jumps into the air,
