For a "no bait" option, just put a cage trap where they walk. Funnel them into the cage along their path using obstacles or guides.
Armadillos eat: Earth worms, Meal worms, Grubs, Ants, Vegetation (lettuce, fruit, etc.).
Setting out rotting meat or vegetation will attract the worms, bugs and maggots that they like. Keep in mind that the type of bait that works on armadillos may attract other pests.
Commercial bait (or repellant) may be a better option.
Check with local authorities for regulations on the trapping and transportation (relocation) of armadillos.
I've linked articles on the baiting and trapping of armadillos that should prove helpful.
