I don't have an iPad, but apparently this is trickier than I expected. When you are in iTunes, you click on the iPad button. It should take you to a new area where, on the left, there should be a list of different apps. This list is representative of all the apps that can be transferred back and forth from the iPad to the computer. You can click on the iPad one on the list and it should take you to files that you can save on your computer or you can drag and drop items into the space to save them in your iPad.

To get iWorks files in, there is an added step. They first have to be iWorks'09 documents, so you must click "import" in a window that comes up after you have dragged and dropped the item.
