How do I use a pressure cooker to cook chicken and dumplings?

My great-grandmother always cooked the best chicken and dumplings from scratch. She would roll out the dough and cut it out by hand. She would cook them in a pressure cooker. They just don't taste the same cooked in a regular pot on the stove.

Hi @cosmompinkice! I love chicken dumplings, and I have been using this recipe to make one. I don't know if this would taste like the one your great grandmother cooks but you can give this a try.

Chicken with Dumplings

You are going to need:
stewing chicken 5 pound, cut up
12 pieces of small white onions, peeled
2 cloves of garlic
4 peppercorns
1/4 tsp crushed thyme
1 tbsp salt
3 cups of water
2 carrots, large, scraped, cut into 2" pieces
2 parsnips, cut into 2" pieces
1 cup biscuit mix
1 egg
1/2 cup of milk

Arrange the chicken inside the pressure cooker, add 1 1/2 cups water and put all the vegetables in the cooker with the chicken at the start. Bring to 15 pounds pressure and cook for 35 minutes and let it cook before removing from the stove.

Mix, the batter for the dumplings by using the biscuit mix, egg and milk. When the chicken is done, place dumplings over the top of chicken and vegetables. Turn on the heat once more and cook it covered for 12 minutes until dumplings are puffed. Serve these dumplings in place of potatoes by spooning the rich chicken broth over the top of each serving.
