6 cups shelled pecans
salt to taste - this isn't necessary if your pecans are already salted or you use salted butter.
Directions
1. Preheat oven to 275 degrees F (135 degrees C).
2. Pour the butter into a medium bowl, and mix in the pecans. Stir until the pecans are well coated.
3. Arrange coated pecans in a single layer on one or two medium baking sheets. Sprinkle with salt.
4. Bake in the preheated oven approximately 1 hour, stirring occasionally. Remove from heat, cool and store in covered containers.
NOTE: You can also coat the pecans with any variety of flavorings. I use cinnamon, or brown sugar and real maple syrup on occasion for something different. I also thing the original recipe calls for too much butter for it to be considered healthy. I usually scale it back to 1 stick of butter and add more if necessary. Depending on your oven the 1 hour cooking time may be too long, it was fine in my old oven, but in the new one I pull them out in 45. I would just keep a close eye on them as you hit the 45min mark and keep them in longer if necessary.
