Hello mmng23,

Traditional Polish Pierogies also sometimes spelt as Pierogi contains a filling of white cheese which is either curd or pot cheese, potatoes and onions. This type of Polish Pierogies is most popular in the United States. However, there are several other recipes for Pierogies in the cuisines of Hungary, Slovakia, Germany and Romania. Polish Pierogies are made with a variety of fillings and these can range from ground beef combined with mushrooms and cabbage to make a savory one or berries can be combined to make a sweet filling.

One recipe for Polish Pierogies with a filling of ground beef, shallots, onions and cheese created by Emeril Lagasse can be seen here http://www.foodnetwork.com/recipes/emeril-live/polish-pierogies-recipe/index.html
Another recipe for Pittsburgh Pierogies can be got here http://pittsburgh.about.com/od/recipes/r/pierogies.htm and this features a filling made from mashed red potatoes, cheese and onions. At this link you will get more information on the different types of fillings including sweets ones that are used when making Pierogies. There are additional links on this page which lead to further recipes which can be used to make Pierogies.
