INGREDIENTS
1½ cups sifted self-raising flour
3/4 cup caster sugar
125g butter (at room temperature)
125ml whole milk
2 eggs
1 tsp vanilla essence
ICING
1 cup pure icing sugar
1 tbs butter (at room temperature)
1 tbs whole milk
Food coloring
Hot water (just a little)
DECORATION
Silver cachous
Orchard white icing
Smarties
Preparation
*First preheat the oven to 180 degrees
*Next use a large patty cups to line a 12- cup muffin tin.
*Then Cream the sugar, butter and vanilla in a bowl using a hand mixer until the mixture is light and fluffy.
*Next, Add the eggs one after the other and beat the mixture until well combined
*Then you stir in half of the sifted flour and half of the milk and mix again. Stir in the remaining milk and the flour and mix thoroughly.
* Fill up the patty cups with the batter and Bake for about 15 to 17 minutes in the preheated oven. The cake is ready when a skewer Poked into it, comes out clean
*Now, Remove the muffin tin from the oven and Let it rest for about 5 minutes, then Place on a wire rack to cool off.
*When they are cool, mix all the icing ingredients in a bowl and ice the cakes
*Follow up with the decorations. This is done by first sifting the pure icing sugar onto a clean table; knead and roll the white icing (Orchard). With a metal heart or star shaped cookie cutter make 12 shapes. Place one on each iced cupcakes and Surround with the silver cachous or smarties.
*Serve and enjoy
