How do I make authentic Italian cannoli?

What are other variants of the cannoli? How are cannoli shells filled with cream? What kind of cream should be used to get that authentic Italian feel?

Cannoli are traditional Italian pastries that originated from the Palermo region of Sicily. They are fun and easy to assemble and can be prepared in advanced if served for a special dinner party or holiday gathering so you won't feel any pressure when serving them. You will need these ingredients:
*for cannoli shells: 2 3/4 c sifted all purpose flour, 2 tablespoons sugar, 1/4 c butter, 1 egg beaten, 2/3 cup Marsala, sherry or sweet wine, 1 egg white, fat for deep frying
*for filling: 1 lb. ricotta cheese, 2 cups sifted confectioner's sugar, 1/3 cup candied fruits mixed with chopped cherries, 2 ounces bittersweet chocolate chips, 1 to 2 tablespoon maraschino liqueur or amaretto liqueur

There are Italian-American variants of Cannoli in which the fillings are sometimes simple as custard of sugar, milk and cornstarch. The cream is usually flavored with vanilla or orange flower with cinnamon
To get that authentic Italian feel use ricotta cheese with maraschino liqueur.
To fill the cannoli shells with cream use cannoli tubes which you can buy at amazon.com for $4-1$10.
