How do I learn to cook authentic Cajun recipes?

Does a person need to go to New Orleans to learn to cook authentic Cajun cuisine? Are there recipes for prawns and Cajun crawfish for me to learn? Is Emeril Lagasse from Louisiana?

As far as how you can learn to cook authentic Cajun recipes, you don't need to go to New Orleans to do so. I would look for a cook book on Cajun cooking if I were you. You can look at Amazon or Barnes and Noble bookstores online where you can search for a particular book subject such as Cajun cooking. Look for a cook book that was written by someone who is Cajun as you are interested in authentic Cajun cuisine. There should be numerous recipes for both prawns and Cajun crawfish for you to learn as those are very typical food items for Cajun cooking.

As far as Emeril Lagasse goes, he is not from Louisiana although he does do some Cajun recipes. Emeril is from Fall River, Massachusettes where he was both born and raised by his parents.
