I presume you are referring to God of War 3, as you don't have them in the first God of War.
You actually get the wings in God of War 2, as soon as you defeat Icarus. Fortunately, you get to keep your wings in God of War 3, so you actually start off with them!
When you jump, just hold the 'X' button, and Kratos will flap his Icarus Wings! Keep pressing the 'X', and Kratos will glide using the wings.
The wings will not only allow Kratos to glide over long distances, (a technique referred to as Icarus Glide), he can also use them to ascend to great hights, when a source of heat is nearby.
When you see a big fire, Kratos can use the hot air to quickly gain height.
Kratos also has two attacks using his wings:
* Icarus Ascension - by pressing L1 +X, Kratos will use his wings to launch enemies into the air, jumping right after them;
* Icarus Strike (Air) - If Kratos is airborne, he can use the same L1 + X combination to perform a single strike with his wings.
