how do I fold fancy dinner napkins?

It really depends on the type of fabric you have.
Most dinner napkins are thick and stiff enough that you could fold them in hundreds of ways. Think of them as a cloth origami.
The most basic way is taking the square and folding it into thirds so you have 1/3 of the length laying flat, and then place your silverware on top.
You can get really creative if you look at all the different folding styles at bumble bee linens.
