How can I save money on holiday meals?

What I do is always buy store brand products and fix them up a little bit with spices/herbs or other components. No one will know the difference. Use coupons if you are able and always buy what is on sale.
Something that is cheap and tasty is a cranberry orange relish. All you do is put 1 bag of fresh cranberries in a sauce pan with 3 cups of water. Use the zest of 1 medium sized orange(use the smallest side of your grater if you don't have a micro plane), Squeeze the juice from the orange in the sauce pan(minus the seeds), 1 teaspoon brown sugar and 1 teaspoon of corn starch. Let this cook down until the cranberries are soft and have popped, and the sauce has thickened a little. This goes great over ham, turkey or beef.
You could also make Stratta. This is basically one dozen eggs, 1 cup of milk, 1/2 loaf stale italian loaf bread cut into cubes, 1 cup cheddar cheese, 1/2 cup bread crumbs, 1 small onion diced, 6 small mushrooms sliced or 1 small can of mushrooms drained, some sliced ham lunch meat, turkey lunch meat and any other veggies you have on hand. You mix the eggs and milk, add a little salt and pepper then add in the other ingredients and bake at 350, covered until the eggs are cooked through. Top it with the cheese and bread crumbs and uncover until the cheese and bread crumbs are slightly brown.
