You could go to the Polynesian cultural center(EAST SIDE OF ISLAND) and see the shows there, but they're very hokey and put on by the BYU campus next door(so that east side of the island is dry, no alcohol).
You could also go the Pineapple plantation in the center, walk the pineapple maze and eat pineapple treats.
Or go to North Shore and watch the incredible waves.
There are some great snorkeling spots in Honolulu and on the Southeast and Southwest shores, but the waves can be kind of choppy in the winter, so you might not get a good day to go.

Besides all the touristy places (if it's your first/second time on Oahu, then you HAVE to hit all the touristy places), I would recommend hitting some of the famous and fabulous beaches: Waimanalo and Makupu'u on the windward (northern) side of the island.
My family is from the Big Island, but Oahu is nice as well...

When you check in, be as nice as possible and tell them it is your first visit. Ask if they have a room in the Rainbow Tower facing Diamond Head. The worst they can tell you is no, and I have had the good fortune of staying there every time just by asking.
If you have funding to support fine dining, please eat at Bali by the Sea. The macadamia encrusted opakapaka there is the best dish I have ever had. (I am a foodie.) Order an appetizer and an entree, and they bring you the most amazing dessert as an expression of aloha. Reservations are generally required.
If you are there on a Friday, go to the King's Jubilee & Fireworks

And don't forget to go to any L & L Hawaiian barbecue while you're there. It's my favorite food from the islands. They just started opening some up here in San Diego and I couldn't be happier. Get the chicken or beef teriyaki barbecue. Delicious.

your best bet is to rent a car and do a grand tour of the island heading toward Diamond Head finishing by dinner on the north shore for a spectacular sunset, romantic dinner and the highest waves on the island. If this is your first visit, you must visit Pearl Harbor for historic purposes.

You need to go to the Polynesian Cultural Center...it's day long but definitely well worth it. You can see what the center offers here http://www.polynesia.com/about-the-pcc.html Definitely one of Hawaii's best attractions bar none.
