From personal experience, I say peanut butter.
I've had good luck with peanut butter.
We had a rodent expert from the county come in. He recommended walnuts. The last longer, have good oils to attract them, and don't degrade like peanut butter.

Peanut butter - works every time.
Mi esposa runs a landscape business and has the best luck with peanut butter with a "friendly" trap (the one that's a cage that traps the rodent inside for later freedom or otherwise "disposal" elsewhere...)
I normally say peanut butter, but lately I starting to think that dry dog food may be worth a try. I found about a cup of the dog's food in the arm of an old jacket we have hanging out on the back porch. Somehow our four cats aren't doing the job like they should.
