I'm afraid I need more information to adequately answer your question. The bad news is that there are more than 100 matches in the each of the turn-of-the-century census for these criteria. The good news is that there are only a little over 100 matches, because these are fairly common names.
If you can provide any of the following, it will help me narrow things down:
- What were the birth/death dates for Martha and David?
- What states did they live in? I'm presuming the U.S. because of the Sam Houston reference?
- Do you have names for any siblings for either of these people?
It's not at all uncommon for all of us to have a few notable people in their family tree - famous our infamous!

I think it's unlikely that Mattie Houston is a close relative of Sam Houston. He was born in VA, with no brothers by the name of David and all of his brothers born between 1784 to 1797. Since Mattie was born in 1856, if there is any connection it would almost certainly be at the Great-Uncle level (although it's possible that a 59 - 72 year old man became a father, the possibility gets lower). I was unable to find a David Houston with a daughter named Martha or Mattie in the records, but I did find a "Leonadus John Houston" in the 1860 & 1870 census with a daughter named Martha of the correct age - and it's simple to see why he may have gone by some other name. Leonadus was born in Georgia.
This diverges from Sam Houston, however, who moved from VA to Tennessee to Texas. It doesn't rule out the possibility of a relationship, but makes the odds fairly slim.
Good luck with your research - there's nothing more fun than a detective story where you know all the players!
