What is your favorite bacon recipe?

In honor of the bacon explosion in the NewYork Times today, I ask you a simple question: what is your favorite bacon-based recipe?

My favorite recipe involving bacon is a cream cheese stuffed, bacon wrapped, chicken breast that I like to do. Here's a link with a simplified version (I tend to add more to it, like roasted garlic in the cream cheese or cajun spice on the chicken breast!

I know it's simple. But
Bacon wrapped Fillet Mignon.

And you make it just like it sounds.

I usually like the peppered bacon and then I add a peppercorn sauce for the top.

Maple-Roasted Bacon

All it takes is bacon and maple syrup. I love being Canadian :)

Great Appetizer or hors d'oeuvres: Take water chestnuts, wrap them in (raw) bacon, and put a toothpick through it. Then, soak in worcestershire sauce for 30 minutes.

Then place them on a cookie sheet and cook in the oven at 300F until bacon is cooked.

Enjoy! They taste amazing.

I'm a traditionalist: the classic BLT. Toasted sourdough bread, garden-fresh warm tomatoes, a little crisp, lettuce, mayo...beats a lot of gourmet fare I've tried.
