Cut down on the calories and fat in alfredo by using margarine instead of butter (they even making fat free margarine), and using skim milk instead of cream or milk fat.
For example:
1 tbsp. margarine
1/4 c. flour
1 tsp. salt
Pinch nutmeg
3/4 c. grated Parmesan cheese
3 c. low fat milk
1/2 tsp. pepper

Unfortunately a 1/4 cup of alfredo sauce only has around 120 calories. Most of those calories are from the pasta. Light sauces tend to have around 90 calories.

If you are trying to eat healthy and watch your weight, pasta is tough - packed with calories.
I would suggest trying 100% whole grain pasta noodles. It takes your body longer to turn the carbs to sugar in whole grain, you won't get as hungry and maybe won't eat as much
In addition, I've been giving myself 1/2 as much pasta as usual and filling the rest of my plate with fruit and vegetables. That will cut your calories by 25%-30%, gets in some additional tastes and healthier anyway.

How many calories are in one serving of pasta with Alfredo Sauce? What is the serving size?
Is there a way to make a low-calorie/healthier version without loosing too much flavor?
