What do you think is the most dangerous occupation to have in the world (i.e. you could actually die doing it? Food-taster?? !)

When you say "in the world" do you really mean it?
There aren't really any stats for the world, but there are some pretty dangeous occupations out there. Being a journalist in Russia seem to be pretty hazardous these days. But just ordinary construction jobs in the developing world or driiving jobs on Africa's back roads probably have appalling safety records as well.
If you want to focus on the US, and mainstream occupations, the same things show up in the stats year after year, but in different orders sometimes: Fishing, Flying, Logging.

In an urban environment, the roads are the most dangerous places to be. Being a garbage collector, truck driver or taxi driver are high up there. Even pizza delivery is pretty high.
It's interesting to notice things that don't make the top of the list. Police officer, fire fighter, even the military. The military as a whole *doesn't* make the list.
But if we just look at the death rate for soldiers in Iraq what do we find?
From 2003 to 2006 the fatalty rate was 392 per 100,000 person years. That's more than double the figures for fishermen .

Now if you think about occupations where those homicides are most concentrated, you might get an idea of what are really the most dangerous lines of work to be involved in. They're probably occupations that don't report their data to the Bureau of Labor Statistics.

The most dangereous occupation , in my opinoin is correctional officer. Yes, if you are a correctional officer you are in a place full of criminals and it would be easy to kill you. Every single day you are in place full of criminals and you are not a criminal. Do the math. There are always more criminals than correctional officer in a facility, and in order to kill somebody you only need your hands.
What do you mean do the math? Show some statistics, show some records. There are genuine occupational risk statistics kept, correctional officer does not even come up on the list.

Also heard once that elephant trainers have the highest accident rate. That is, if there were 100 elephant trainers in the world (for example), a larger percentage of them proportionally would be injured on the job than in any other occupation.

Elephant trainers sometimes show up for that reason; but, only in certain unlucky years. Other years there are no deaths at all.
I didn't think that school teachers would be on the list. I wonder if the only hazards are the students?

I heard that the special Coast Guard forces have an extremely high chance of dying per mission (more so than any other job). I have no source for this.
I have read many places that of 'regular' jobs, fisherman, loggers, roofers and miners have high rates of death at their jobs.

THE most dangeroud job in America is a lumberjack with sharp, large, dangerous machinery; huge trees falling all around; mountain climates; dynamite; and transporting lumber several tons in weight. Yeah... you have a good chance of dying there. That and ice road truckers and ocean crab fishers, plus bodyguards adn maybe even police and firefighters in seedy parts of town. Those are all definitely dangerous jobs.

This is kept track of in the USA. In 2005 it was fishing. A few years earlier it was logging. Britain also reports fishing as the most dangerous occupation. Worldwide, fishing is estimated to be the most dangerous, although records are poor. Logging is probably again the main contender. However, a third occupation that used to be most dangerous in the USA is coal mining. It has gotten safer here; but, worldwide it may still be a possible most dangerous. In China coal mining is likely to be the most dangerous occupation today.

Great, well thought out answer.
This article says Cell Phone Tower techs. Companies are being so hasty trying to get as many towers up as possible, that carelessness takes over and some people die. I wouldn't have thought of this!

I think being a Lumberjack would be a very dangerous job. Unfortunatley it's not something I know a lot about, so I can't really give any details without having stolen them from another site.

I would have to say Working on Cell Phone Towers is the deadliest job in the world. The fatality rate as of July 2008 was 183.6 deaths per 100,000 workers.
