It's hard to say which defender Kobe plays worst against. It also depends on how is his mood on that particular game. Despite a player is a great defender, if Kobe goes off it does not really matter.
At recent Game 4 Ronnie Brewer (Utah Jazz) defended Kobe really well. Brewer was right on his face and did everything he could. But Kobe being Kobe, he still made ridiculous shot.
One of the players that Kobe has great respect as great defenders:Raja Bell (when was with the Phoenix Suns - still good with the Bobcats; Lakers are 0-2 against Bobcats this season)
Looking at today's game at half time: he is 4/12. It looks like Shane Battier and Ron Artest (which can be considered great defender) are doing great job.
Finally, all Boston Celtics players did well defending him at last year NBA Finals (all the traps, man to man, etc).

That is one of the reasons, Lakers lost in the first round to the Phoenix Suns in 2006 and 2007.
