Masters of the Void hosts what looks to bee a good beginner tutorial for programming in C on the mac. The home page states, "Masters of the Void is a tutorial for Macintosh users interested in learning to program their Macintosh using Xcode and the C programming language. It assumes no prior knowledge of programming. "

Also, you'll want to take a look at the Mac Developer Center. Especially the "Getting Started with Tools & Languages" section.
