I don't know any actual stats, but I do know that from what I have researched that a cookbook and a trashy romance novel have the best chance of getting published in the traditional manner. Barring being a celebrity chef though, be prepared for a lot of refusals before you find a publisher that will take you on, and then be prepared for the letdown of how much they are going to pay you for it and all the copyright/legal stuff. My bet for anything I want to get into print is either selling it on the Web as an e-book, or self publishing with a company like "Get Published" or like one of the Google ads that are popping up on this page and then hawking it yourself on the Web and in local independant bookstores etc..
