The definition of Redoubt would make it an easy choice to name a mountain - especially considering it's history of smoking an eruption. Considering it's location in the mountain range it could look like a mountain encamptment.
1. an isolated work forming a complete enclosure of any form, used to defend a prominent point.
2. an independent earthwork built within a permanent fortification to reinforce it.

I also found considerable links to Captain Cook and the Cook Inlet but could find no evidence of the origin of the name

I'm sorry but I couldn't find the name origin of Mt. Redoubt (Alaska). However, I did find this link: (http://www.avo.alaska.edu/volcanoes/volcinfo.php?volcname=Redoubt), which has some interesting information. The link also includes a number of synonyms for the mountain, which leads me to believe that the name may derive from a derivative of another name...just a guess, I could be completely off-base.
