German steel.
It's not as shiny when polished as some others, but I've got german steel knives that I sharpened *once* with an arkensas stone, and years later, even after having been used to cut wire and chip rocks, were still holding an edge.

Yes, German steel marked "Solingen". But it really depends on the knife and its function. For a paring knife there are some great ceramic knives, particularly from Switzerland. They're sold at Whole Foods, in cookware stores and on the web. These knives are safer for elders and those with arthritis or other conditions limiting mobility in the hand.
