I have never tried stainless steel chopsticks, but I can imagine that they wouldn't be good unless you're a sadistic pro or something.
I have bought and used both plastic and wooden and find both easy to use.
I prefer the wooden, square shaped throw away styles the best, since I can get the best grip on food.
I love to use the wooden ones when I eat my sushi. (yum)

Recently got packs of stainless steel ones & I'm not a big fan.
