In all seriousness just because its called "sour" cream doesn't mean its spoiled or anything like that. The "sourness" is from the lactic acids! Even if its cultivated you still have to remember it has... "CREAM" in it which can go bad, does go bad and will go bad - refrigeration or not! This is also a product which is NOT fully fermented.
Even a product like Sauerkraut which IS fully fermented can still spoil once the lid is popped open. Unopened? It could stay around for quite a while which is the reason it was used in so many dire situation like the depression and a few of the wars.
