Well jelly needs to be refrigerated and peanut butter does not, so I would try to avoid getting jelly in the peanut butter. Also you probably don't want peanut butter in the jelly, but I don't think it is dangerous. If you want to use the same knife, I recommend just wiping it clean before you put it in the next jar.

When I make a PB & J for my kids, I put the peanut butter on and then wipe the knife with a paper towel to put the jelly on. Or I use the squeezable jelly, then there's no knife issues :)
