I like to keep things simple, and my favorite basic recipe for grilling beef is a tri-tip roast with a Santa Maria-type rub. There are various recipes for Santa Maria rubs, but I use 2 parts each of coarse salt, pepper, garlic, and parsley, plus 1 part sage. Coat the roast with the rub, let it sit in the fridge for a few hours, then grill. Sear it on each side for a few minutes, then let it cook over medium heat until done. I don't use a timer; when the thin part of the roast feels like it's medium-well, the thick part should be medium-rare.
