Very easy dinner, try it.

Ingredients
1-2 lb veal cutlet or chicken cutlet
cooking spray
2 tablespoons butter
1/4 teaspoon pepper
1/4 lb fresh mushrooms, sliced
2 tablespoons flour
3/4 cup dry white wine
1/2 cup water
1 tablespoon chicken bouillon granule
1/4 cup lowfat mozzarella cheese, shredded
2 tablespoons parmesan cheese, grated

Directions
1Coat the veal or chicken with cooking spray.
2Place butter in skillet and heat over medium-high heat until butter melts.
3Add veal or chicken and saute 1-2 minutes per side until it lightly browns.
4Drain on paper towels and place in a baking dish coated with cooking spray.
5Sprinkle with meat with pepper and let it rest.
6Cook mushrooms in skillet until tender and remove from pan; reserve drippings.
7Spread mushrooms over the meat.
8Add flour to the drippings in the pan and stir until smooth.
9Cook over low heat for 1 minute, stirring constantly.
10Gradually add wine, water and bouillon granules and cook over medium heat, stirring constantly, until thick and bubbly.
11Spoon sauce over meat and mushrooms.
12Top with cheeses.
13Bake at 425 degrees F. for 10-12 minutes for veal and 20-30 minutes for chicken.

SALAD : Green salad with black olives and feta cheese.
Cut tomatoes,cucumber,lettuce ,shredded carrots. Put into a salad bowl.Add slices of the olives and cheese.
For dressing: olive oil, salt to taste (remember olives and cheese has salt too ) ,lemon juice , mix all ingredients .

SOUP: Oatmeal with carrots soup
Saute garlic, onion, and the shredded carrots in a little oil in a small pan. Add chicken stock or 2 1/2 cups water and a boullion cube ,bring to a boil until carrots are almost tender, then add oatmeal (3tbsp.). Let it boil until it starts to thicken. Garnish with parsley (chopped) leaves.Serve medium hot.

DESSERT : CINNAMON APPLE TORTE
4 tbsp.butter
1 cup sugar
3 apples (big) slices -peeled,cored cut into crescent slices
1 tsp.cinnamon
1 cup flour
1egg
1/2 tsp.baking powder
1/4 tsp.baking soda
1/8 tsp.salt

Preheat oven to 350 deg.F. Beat butter with sugar. Add egg and beat. Sift flour ,cinnamon, baking powder,b.soda and salt. Beat dry ingredients to the batter mix. Stir apples, batter will be thick. Pour in a pie pan 9". Bake.

i say go all out i like to cook steak and shrimp for myself hey its better if you dont have to share..lol

An omelet. You can fill it with different meats, vegetables and cheeses so you are getting a well-balanced meal that only requires one pan and is quick and easy to make! Have a slice ot two of whole wheat toast with it so you get some fiber, too.

I think the best meals for one are things you can cook once and make multiple meals. Cook Meatloaf and use it for a meal one night and for a second meal have leftover meatloaf in spaghetti or leftover meatloaf with gravy on bread for an open faced sandwich.

You can do similar with chili. Make a pot of chili. Freeze some in individual containers for lunches and use some for one nights meal. Use left overs to make super nachoes.

Buy a rotisserie chicken. Use some for the evening meal, make chicken salad from some, and use left overs to make fried rice.

I like to make healthful versions of basic recipes when I have the time, like spaghetti sauce, chili or some type of soup in large quantities, and freeze it in single serving size containers. Then I defrost one as the basis for a good healthy meal and add something easy to round it out like a baked potato, steamed broccoli or a salad and some good bread.

This allows me an easy way to eat good homemade food without resorting to junk like processed frozen dinners, or pathetic, lonely-looking meals for one like a cold sandwich or cereal.

I think the best kind of dinner to cook for one are salads and meat. My reason is you are cooking for yourself, so prepare something easy and something fast. In addition to that, you are eating healthy.
