Generally this is as a mark of respect and remembrance of the sacrifice made by Jesus, this is why it is done around the time where Jesus' death is remembered.
In the Roman Catholic Church, Ash Wednesday is observed by fasting, abstinence from meat, and repentance-a day of contemplating one's transgressions. The Anglican Book of Common Prayer also designates Ash Wednesday as a day of fasting. In other Christian denominations these practices are optional, with the main focus being on repentance. On Ash Wednesday and Good Friday, Roman Catholics between the ages of 18 and 59 are permitted to consume only one full meal, which may be supplemented by two smaller meals, which together should not equal the full meal. Some Roman Catholics will go beyond the minimum obligations demanded by the Church and undertake a complete fast or a bread and water fast. Ash Wednesday and Good Friday are also days of abstinence from red meat (for those Catholics age 14 and over), as are all Fridays in Lent. Some Roman Catholics continue fasting during the whole of Lent, as was the Church's traditional requirement, concluding only after the celebration of the Easter Vigil.

Restaurants where there are lots of Catholics, such as here in New Orleans, do not offer sales on steak on Friday, which would be considered tasteless, so to speak. Rather, they offer seafood specials. The mental gymnastics needed to consider eating a New Orleans fried seafood platter a form of fasting are beyond me. However, that's what they do, and the seafood restaurants all get a boost on Fridays, especially during Lent.

maybe they should be discount at the steak house on fridays

Catholics are the only major religion to avoid meat specifically on Fridays. They actually have mostly stopped doing it now, although some keep up the practice during Lent. It is an odd tradition that started as an actual fast but got weaker and weaker as the centuries passed. At some times even waterfowl such as geese were included as permissible. I have seen the same thing here in New Hampshire. Many restaurants offer little in the way of steak or meat on Friday, especially during Lent.
Even if the restaurant does offer meat I have seen the chefs go out of there way to make sure the Friday specials are primarily seafood. Ditto on the fried seafood platter, that looks familiar to platters I have eaten and seen served here and there is no way do describe eating a New England seafood platter as fasting.
