Really good eggs (as opposed to Jack Sparrow's really bad eggs). Seriously, people who have never eaten fresh eggs raised on farms with chickens running around freely don't know what a big difference there is in taste.
Secondly: Quesadilla cheese, or queso asadero, make it great--better than just colby or mild chedder or colby jack. Go for authenticity every time and it won't fail you.
Then, good onions, fresh garlic (forget the powder), fresh peppers of some kind (jalapenos, bells, or something fun like Venezuelan sweet habaneros) chopped very fine.
Good sausage. Chorizo is great, but if you can't find it hot sage breafast sausage will work.
Handmade tortillas if you can find them. If nothing else you can use the refrigerated ones most groceries have, but don't use the shelf-stable ones.
Finally, the sauce. It's easy to make a good ranchero sauce, or Trader Joe's has all kinds of salsas and sauces already made.
And good sour cream to top it off. Mexican Table Cream, or Daisy brand sour cream (the only one that's nothing but cream, in my area at least--no starches or gums).
