Make a gigantic greek salad, with feta, cucumber, tomato, red onions, olives etc - there's a recipe here:

If you want to make it even MORE gigantic add toasted pinenuts, humous on the side, halloumi cheese on top and a nice bit of oil and balsamic vinegar to give it zing :) Serve with crusty, rustic bread or warm pittas.
