I love zucchini bread and most recently I tried Paula Deen's recipe for Chocolate Chip Zucchini Bread. It was fantastic. Here's what you'll need:
-3 cups all-purpose flour
-1/2 teaspoon baking powder
-1 teaspoon salt
-1/2 teaspoon ground cinnamon
-1/2 teaspoon ground nutmeg
-1 teaspoon baking soda
-3 eggs
-2 cups white sugar
-1 cup vegetable oil
-2 teaspoons vanilla extract
-2 cups grated zucchini
-1 cup chopped pecans
-1 cup semisweet chocolate chips
-1 tablespoon orange zest

When I want to make a healthier Zucchini Bread I use this Self Magazine recipe Zucchini Spice Bran Muffins (It's a muffin recipe but I make it as a bread). What You'll need:
-1/2 cup grated zucchini (I usually add a little more)
-1 egg white
-1/2 teaspoon grated ginger
-1/2 teaspoon grated lemon zest
-1/4 cup sugar
-2 tablespoons extra light olive oli
-1/2 cup high-fiber cereal (such as All-Bran)
-1/4 cup raisins (sometimes I use pecans or walnuts instead--I don't like raisins)
-1/4 cup whole-wheat pastry flour
-1/2 teaspoon cinnamon
-1/4 teaspoon baking soda
-1/8 teaspoon baking powder
-Vegetable oil cooking spray

If you are just looking for a basic recipe, try this
2 eggs, beaten
1 1/3 cup sugar
2 teaspoons vanilla
3 cups grated fresh zucchini
2/3 cup melted unsalted butter
2 teaspoons baking soda
Pinch salt
3 cups all-purpose flour
1/2 teaspoon nutmeg
2 teaspoons cinnamon
1 cup chopped pecans or walnuts (optional)
1 cup dried cranberries or raisins (optional)
I haven't tried this one myself, but it is similar to one I have used. For the rest of the instructions: http://www.elise.com/recipes/archives/001330zucchini_bread.php (there is a second recipe that adds pineapple, I'm going to try that one next).
