I have three things I get cravings for:

1. Trader Joe's English Cheddar with Carmelized Onions. Whoa, Nellie.

2. Trader Joe's sliced havarti

3. Real Wisconsin-produced American cheese. To be American cheese from Wisconsin, it can only contain cheddar ends and milk. American cheese produced elsewhere often has the ends of all kinds of cheeses from all over the world, and the flavor can be variable and muddy.

I read your cebco source and have to comment that that is one of the more all around disgusting things I have encountered. There he is, boasting that his aim is to make as much money as possible, attacking foreign cheeses probably every one of which is better than anything he has ever made, and boasting about cooking leftovers and milk and calling it cheese. Blech!

The source says he's supporting many families so he's trying to sell as much as he can. Why is that disgusting? And he's not cutting down foreign cheeses simply for being foreign (nor am I--I love all kinds of cheeses). He's saying that only in Wisconson is it required by law to use only domestic Cheddar, and that other makers simply shop the world for the *cheapest cheese leavings*--the trimmings off the worst cheeses. He's not boasting but describing the process by which ALL American cheese is produced. He does say he ages his, which is a good thing.

Maybe it's a super-thick melted cheese/milk sauce that's aged, but it's still good. Not good like my first choices, but it's way beyond Velveeta.

If it's store bought, I love the Cracker Barrel extra sharp cheddar cheese. It's great to eat alone or put on crackers.

At an actual cheese store (Cheesetique in Alexandria, VA is amazing) I like the specialty bleu cheeses.

It's close, but I would have to say Pepper Jack.

Next is cream cheese, and I know that's just wrong, but you asked. :)

Dill Havarti all the way. Runner up would be apple smoked Gouda.

I'm not clear what you mean. Do you mean as opposed to a cooking cheese like Feta? Or do you mean not even spread on a cracker or the like?

Either way, my favorite cheese, whether eaten straight or not, is soft Gorganzola.

So called American Cheese is not really cheese at all, it is a processed cheese product. You really ought to try some of the many cheeses of the world (or even America).
