It would have to be Dim Sum! How could it not? I just love this answer to the tapas bar:

It is usually served in the mornings until noon time at Cantonese Chinese restaurants
It's not Cantonese dish as such but one of my favorites is Mapo Doufu or Mapo Tofu.
It is bean curd with spicy-chilli and bean based sauce and oil served with minced meat (beef or pork - but pork is the best). On some areas, it is served with water chestnuts or Chinese mushrooms.
