Well, I usually make 'World's Best Lasagna' from All Recipes.
It uses a combination of Italian sausage and ground beef, but check out all the other awesome stuff that goes in there!
1 pound sweet Italian sausage
3/4 pound lean ground beef
1/2 cup minced onion
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
2 (6.5 ounce) cans canned tomato sauce
1/2 cup water
2 tablespoons white sugar
1 1/2 teaspoons dried basil leaves
1/2 teaspoon fennel seeds
1 teaspoon Italian seasoning
1 tablespoon salt
1/4 teaspoon ground black pepper
4 tablespoons chopped fresh parsley
12 lasagna noodles
16 ounces ricotta cheese
1 egg
1/2 teaspoon salt
3/4 pound mozzarella cheese, sliced
3/4 cup grated Parmesan cheese

Mexican Lasagna

Super Easy!
INGREDIENTS (Nutrition)
* 1 pound lean ground beef
* 1 (1 ounce) package taco seasoning mix
* 1 (14 ounce) can peeled and diced tomatoes with juice
* 10 (6 inch) corn tortillas
* 1 cup prepared salsa
* 1/2 cup shredded Colby cheese
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large skillet over medium-high heat, brown the ground beef, and stir in the taco seasoning and tomatoes. Line a 9x13-inch baking dish with half the tortillas. Spoon the beef mixture into the dish, then top with the remaining tortillas. Spread salsa over the tortillas and sprinkle with the cheese.
3. Bake at 350 degrees F (175 degrees C) for 20 to 30 minutes, or until cheese is melted and bubbly.

Also, a good option for a lasagna is to do ground beef AND sausage. My mom does it this way and it's fantastic. Use sweet sausage instead of hot so it does not overpower the lasagna.

What is the best kind of filling to use in lasagna? I like sausage but I bet meatball is also good.
Any answer is okay. Cheese? Vegetables? Something else entirely?

I've often thought that Lasagna is such a popular dish because it can be made so many different ways. My family enjoys lasagna and while we're a little bit "purist" (we like meat and cheese), there are a variety of tasty fillings and combinations that should not be overlooked. This is a really great lasagna recipe.

I'm a vegetarian, and lasagna is one of my favorite dishes to make. I like spinach, broccoli and sun-dried tomato the best--I just chop the spinach (or thaw a frozen package), quickly blanch the broccoli until tender, and add all of these ingredients to the ricotta cheese mixture. Believe it or not, ground turkey meat is good. If you season it with Adobo (similar to garlic salt and is made by Goya), it's yummy. Make sure you get something that has at least 7% fat (not the 99% fat free.. too dry). The sauce, cheese, etc. will be more than enough flavor to compliment the turkey (and satisfy the beef lovers.. they may not miss the ground beef!) Also, a good option for a lasagna is to do ground beef AND sausage. My mom does it this way and it's fantastic. Use sweet sausage instead of hot so it does not overpower the lasagna.
