Ok this is my favorite veggie recipe! It's simple to remember and easy to make. It's my version of brocolli salad.
Ingredients are:
1 package of brocolli, usually has two medium heads in it.
1 small tub of veggie dip (any kind you like, I prefere buffalo style)
1 large carrot, peel the carrot using a potato peeler into 1 inch size slices, you don't have to use it all, it's based on preference
1 cup of shredded cheese (I like to use cheddar but any will do)
5 precooked bacon strips (you can use 1 cup of bacon bits if you like)
All I do is clean the brocolli, cut the tops off, the stems can be used in a soup or something but not for the salad. Add the veggie dip and other ingrediants and just toss. When you're done mixing these ingrediants then you should chill the salad. If the salad looks a bit too wet that's a good thing because the cheese will eventually dry it out. I usually leave it in the fridge for a half hour before serving. It should serve two to three people depending on how much they eat. Enjoy!
