You can try to cook chicken curry with coconut milk. Very tasty. It can be served with plain white rice.
1.5kg of chicken (cut ). Saute chicken in oil,garlic,onion and ginger (freshly cut in strips, about 1 tbsp) ,add 1 tbsp.soy sauce ,then add 1 and a half cup water,bring to a boil in medium heat for 10mins.
Add curry powder 2tsps.to boiling chicken,salt ,black pepper ,stir,let it boil for another 10mins. or until half cooked.
Pour 1 1/2 cups coconut milk (if powder,dissolve it first in water) into the chicken curry,simmer uncovered for 15-20 mins. more until chicken and veggies is tender.
note:before pouring the coconut milk ,add sliced(1 inch thickness)1potato,1carrot,1bell pepper(any color you like) and 1/2c.green peas.
garnish with fried nuts (any) ,optional.

Glazed chicken over rice comes to mind. You basically take the chicken cut it into 1" cubes or bite-size pieces, and sautee in 2T of butter until browned. Then, add 1t minced garlic, 1/4t minced red peppers, a dash of pepper, a dash of seasoning salt, and 1T maple syrup. It has to be real maple syrup, not some sort of breakfast syrup. Serve over rice.

How about chicken in red wine sauce? You just sautee some onion,garlic, mushrooms, red pepper and of course the chicken,in butter,gradually add some cornflour, red wine and a chicken stock cube,seasoning and a pinch of mixed herbs.Keep stiring until it thickens,then lower the heat until cooked,aprox 30 mins.You can serve this with rice,pasta,or vegetables.
