Here's a really good recipe for baked chicken wings that my mom makes alot.
CRISPY BAKED BARBECUED CHICKEN WINGS
1/2 c. fine dry bread crumbs
1 tsp. brown sugar
1 tsp. chili powder
1/2 tsp. garlic powder
1/4 tsp. dry mustard
1/4 tsp. celery seed
1/8 tsp. cayenne
2 to 3 lb. chicken wings, cut apart or 2 to 3 lb. drummettes
1/4 c. melted butter
Combine all dry ingredients. Add salt and pepper to taste to the crumb mixture. Brush drummettes or wings with butter, and shake 4 or 5 at a time in a covered bowl to coat with crumbs.
Arrange on shallow baking pan and bake at 375 degrees for 50 minutes. DO NOT TURN. Use as an appetizer or main course. (Double crumb recipe, if necessary.)

1) Place wings in Herb based salad dressing for 24 hours.
2) Drain wings from marinade and place in slow cooker on low for 3 hours.
3) Coat with good quality rub. This is the rub I use:
2 tbsp. kosher salt
2 tbsp. Hungarian paprika
2 tsp. garlic powder
1 tsp. cayenne pepper
4) Place on baking sheet in Oven at 500 or BBQ until they look good. Usually about 10 minutes.
I've had a lot of good comments about my chicken wings and I've even been asked specifically to bring them for others to enjoy. I like this recipe because it's easy to prepare ahead of time with a quick splash in the oven to finish. This works very well for dinner parties or entertaining in general.

I learned that recipe at a flea market, and I've used it on anything from corn to chicken to beef. It works every time.

You can put the chicken wings to soak in sweet red wine. After about an hour in the fridge, take them out and while wet put some paprika and coriander seed on them. I am a big fan of squeezing lime on that, but my mom isn't. It works really good with the coriander seed. If you want, also shake some parmesan or romano cheese on them before or after putting them in the oven, and squeez some more lime on them too. I learned that recipe at a flea market, and I've used it on anything from corn to chicken to beef. It works every time.

I love to rub chicken wings with a mixture of olive oil and butter, and then rub them with a combination of equal amounts of rosemary, thyme, sage, and marjoram with a little salt. Then I throw them in the crockpot on low for about 4 hours. They come out fabulously! It's so simple I never use a recipe.

I would think that recipe would work with fresh chicken as well.
