Well their is the chop suey in a can from the grocery and then there is CHOP SUEY from a REAL restaurant! Go for the real!
Essentially it is a stir fry with vegetables, meat and noodles.
Try a lunch portion if you are testing the flavors. If you already like Chinese you will probably like this too. Served over white rice generally.

Chop suey is an American dish made to seem oriental.
There is a song in the Rogers & Hammerstein musical "Flower Boat Song" that describes it well. In the musical, it represents the melting pot that IS America.
